Crabs and Other Seafood from The Northeast
Though we are from New York, while living in the Northeast we prefer seafood but in Maine we had to live up with crab cakes. It was wonderful! You haven’t tasted crab cakes until you get it from the source. When we got back home, we started to crave some crab cakes but we weren’t going to travel back to Maine.
So, we decided to look up a crab dish online. Now, that was hard. Most of the recipes were difficult and told us to buy a certain type of crab meat which was really expensive. Don’t forget that crab cakes are commonly given as appetizers, but they are alright for an informal dish, or if added to a larger dish. If you are going to serve them as appetizers, you want to make sure you also offer interesting sauces or dips to go along with the tasty cakes. Go with the tried and true red cocktail sauce for an otherwise good,hearty tarter sauce. Crab soup: Ingredients 1/2 kg crab meat, cooked and flaked, cartilage removed 1-1/2 cup chicken stock 2 cups water 2-1/2 cups tomatoes, chopped 3/4 cup chopped celery 3/4 cup onion (chopped fine) 1 cup corn kernels 1 cup peas For Seasonings: 1 teaspoon seasoning (a dash paprika and celery) 1 bay leaf 1/4 tsp pepper 1 tsp lemon juice Method Put chicken stock, water, tomatoes, celery, onion, and seasonings in a vessel, and bring to a boil. Simmer for about 20-30 minutes. Add corn and peas. When cooking,simmer the meal until the corn is cooked and then heat the added crab meat until that is heated through. Remove bay leaf. Serve hot.
